I have been sucked in to the new Music reality show on NBC called, “The Voice.” If you haven’t watched this yet, check it out. I have literally been driven to tears (ok, so it’s not the longest trip) by some of the amazing performances, like the 16-year-old Xenia. So much so that I have watched the encore (read exact same) episode two nights in a row.
And while some of the aspiring stars had amazing performances, the main reason I went back for more… or more of the same… is because I like to watch Adam Levine from Maroon 5. He’s just hot. A little bit bad boy, a little bit clean cut, a lotta bit sexy and so talented.
Whether I actually end up getting invested in this show remains to be seen. But the fact that I could have a steady date with Adam Levine every Tuesday night might just sway me.
We can’t seem to get our Spring on around here. It’s been in the 30’s at night and rain and 40-50 degree temperatures have plagued us for what seems like an eternity.
So with nothing thawed for dinner, I pulled together a few staples and made a really good Cheesy Chicken Enchilada Soup in under 30 minutes, the majority of which was just stirring.
Here’s the recipe for a cold weather, hot bowl of soup…
1 cup carrots, shredded
1/4 cup green onion, sliced
3 tbsps butter or margarine
1/4 cup all purpose flour
2 cups skim milk
10 3/4 oz chicken broth
1.5 lbs chicken breast, shredded or cubed
1 cup cheddar cheese, shredded
3/4 to 1 cup of picante sauce, your choice of temperature
1/2 tspn Worcestershire sauce
1/8 tspn black pepper
Serve with warmed tortillas or tortilla chips, crumbled
In a medium saucepan, cook carrots and green onion in hot margarine or butter about 10 mins or until tender, but not browned. Stir in flour. Slowly add milk, chicken broth, Worcestershire sauce and black pepper. Cook and stir until thickened and bubbly. Stir in chicken, cheese and picante sauce. Cook and stir over low heat until cheese melts. Serve hot over crumbled tortilla chips or with warmed flour tortillas.
Prep time approx 20-25 mins

Although I am normally a coffee drinker, I have this new affinity for chai tea. So when I saw this adorable teapot for one, I was immediately intriqued.
What a great gift for a tea drinker. Who could resist this little tower full of tea and whimsy? I may have to “gift” it to myself…

Michael Kors, I’m in love with his watches. I want lots of them. I want to need one of those men’s watch boxes to display all my cool watches.
So… I’m flipping through one of my many magazines and I catch the Michael Kors print ads. You know the ones featuring some tall, leggy, sun-kissed blonde with a large gold-toned chronograph watch on.
And… my crazy bad lust for that watch starts all over again. Really? How many watches can a girl have?
