Spicy Cilantro Chicken: too good not to post!

My mom gave me this recipe and I have added it to my regular repertoire.  It’s too good not to post – Bon Appetit!

Spicy Cilantro Chicken

Makes 4 Servings

1 lb chicken breast cut into 1″ pieces

4-5 Yukon gold potatoes

2 bunches cilantro, stems removed

3 cloves garlic

1/4 large white onion

1 jalapeno pepper, seeds removed

1/2 lime

salt to taste

1 tbsp olive oil, 6-7 tbsp olive oil

Cut potatoes and chicken into 1″ pieces.  Cover large skillet with 1 tbsp olive oil, throw in potatoes on medium-low heat and cover for approximately 15 minutes, turning occasionally.  Add chicken and toss with potatoes, cook for approx 5 more minutes on low heat.

While potatoes and chicken are cooking, put onion, jalapeno, garlic, salt and cilantro in food processor.  Use a fork to remove lime juice from rind and add to mixture.  Grind adding olive oil 1 tbsp at a time until it becomes a smooth sauce.

Add to skillet with chicken and potatoes, toss to coat.  Cook on low for approximately 5 more minutes and serve.
